Charlie's St.Pat's Soup Tom, The typical problem with most St Patty's Day dinners is the leftover veggies. Here's what I just did and it's got so many variables it's great for everyone. I cook my beef and remove it from the liquor and then I cook all of my cabbage, carrots and potatoes in that broth. (Makes them taste good, right?) All the meat is gone, what to do with the leftover veggies? A couple days after the meal, I took all the leftover veggies (this year I even tried turnips and parsnips, very good!) placed them all in a large pot and added about 1 quart of chicken broth, a handfull of real bacon (cooked) chopped (Hormel in a bag) and let it all simmer for about 1 hour until everything was really overcooked and soft. I then took my blender wand, immersed it into the entire mix of veggies and broth and pureed it.
To serve:
1. Just as is, adjust for salt and pepper
2. Place some cooked pasta in a bowl with some grated cheese and pour hot soup over.
3. In step #1 above, try adding some half and half to it for cream soup!

I have found this to be a good, easy and filling soup, especially for kids going out in the cold weather of March. Of course, if you are an adult and dieting, serve it as it is in step #1. One can always use a blender if you do not own a wand.
